Bikini Recipe

Serves 10 people

For the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Drink (makes 850ml, to serve 10)

400ml premium vodka

150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

For the Syrup: Put the listed components into a pot, bring to a simmer, stirring so the sugar melts. After that, take off the burner allowing it to cool down entirely. Decant to a sealable bottle, seal and store chilled, it can be stored for up to one month.

Preparing the Premix: Combine every spirits and syrup into a large bottle, allow it to infuse for an hour, then strain , ideally through muslin, so it's fully clarified.

To serve: Measure 85ml of your premix into a cocktail shaker filled with ice, and stir lightly for about 60 seconds to cool it down. Filter to a chilled martini glass or equivalent, top with a few cranberries and finish using a brief mist of the essential oil over the top.
